How to Make Yogurt

You need a good yogurt culture. You can get this from any plain yogurt, but we reccommend Seven Stars Farm brand, as they are organic, and not "low fat".

put three tablespoons of the culture in a quart jar. (Ok if you get a little more)

Fill up with Raw Milk

Place in a stock pot ((however many will fit in the pot, we do 3 or 5 at a time depending on the pot. The stock pot holds heat around the jars, and this is the same as an "incubator." You are incubating the live cultures in the milk.)

Put in the oven, with only the light on 24 hours.

DO NOT TURN ON THE OVEN, ONLY THE LIGHT.

If you get yogurt that has a "whang" to it (tastes like it has a small amount of carbonation and/or alcohol in it) you probably need a stronger wattage bulb.

I believe the standard is 40 watt. You may want to put in a 60 watt if you get the "whang."

Put in a small amount of Vanilla (I like a lot, so do it to YOUR taste)

We sweeten it with grade B maple syrup, and Stevia (a natural extract).

You can add fresh fruit for a real fun treat.

We sometimes sprinkle Rapadura and cinnamon on this treat, when we do the above cereal and yogurt.

I'm glad you expounded on the light. I was thinking pilot light (i.e. gas stove).

I don't believe I would try this with a gas stove, but if you are so inclined, maybe with just the pilot light, at your own risk...

Be advised that this yogurt is not as thick as store yogurt, because of thickeners added commercially, but it does have thickness, and is really good and creamy.

Question -

Is it necessary to purchase the starter after you get started? In other words, can you save some yogurt to use to get the next batch going? Kind of like sourdough bread starters?

BTW - will be making some yogurt this 24-hour period. :mrgreen: Yah willing.

No, just use a starter from your last batch.

That's what we do.

We only get a new starter if the "whang" I described above occurrs.
